Pairings
Winemaker's notes
It is made from 100% native white grapes in late August/early September, and sourced from “mosaico” of small vineyards located throughout the province of Chieti. After a soft crushing and pressing of the grapes, the juice is placed at a thermodynamically controlled temperature (57- 61°F).
Initial fermentation takes place on selected lees. Next, the wine undergoes a second fermentation in stainless steel tanks (autoclaves) with an aging according to the Italian method (or Charmat method) at a controlled temperature. The entire period of foaming and aging lasts about 30-45 days.
