Vibrant and joyful, the MUST CUVÉE 40+40 is the first component of the ‘Capsule Collection’ that, year after year, will be enriched with new sparkling wines that are the result of careful and innovative research into the most suitable territories. This is a sparkling wine obtained by direct frothing from must, which allows all the fruity and ‘primary’ aromas of the first fermentation to be preserved, to which are added the fragrances of the Cuvée Close fermentation.

Production area: Central Italy, Abruzzo, province of Chieti

Vinification: Crushing and soft pressing of grapes

Fermentation: The must obtained starts the direct fermentation in an autoclave, which takes place thanks to the natural residual sugars present in the wine. This process takes place under thermodynamic control (14 to 16°C) using selected yeasts.

Straw yellow with brilliant reflections. Fine-grained and persistent perlage.

Colour

Intense. Herbaceous and floral aromas combine with fruity hints of citrus and green apple, peach and apricot.

Bouquet

Fresh, decisive with a long, enveloping finish and a pleasant savoriness.

Taste

Ideal as an aperitif; fish and vegetable-based first courses, white meat, fish and shellfish.

Pairings

This is a sparkling wine obtained by direct fermentation from must, which allows the preservation of all the fruity and ‘primary’ aromas of the first fermentation, to which are added the aromas of the Cuvée Close fermentation.
