This is a sparkling wine obtained by direct
frothing from must, which allows all the fruity
and ‘primary’ aromas of the first fermentation
to be preserved, to which are added the
fragrances of the Cuvée Close fermentation.

Vinification: Crushing and soft pressing of grapes
Fermentation: The must obtained starts the direct fermentation in an autoclave, which takes place thanks to the natural residual sugars present in the wine. This process takes place under thermodynamic control (14 to 16°C) using selected yeasts.
Wine description
Straw yellow with brilliant reflections. Fine-grained and persistent perlage.
Colour
Intense. Herbaceous and floral aromas combine with fruity hints of citrus and green apple, peach and apricot.
Bouquet
Fresh, decisive with a long, enveloping finish and a pleasant savoriness.
Taste
Ideal as an aperitif; fish and vegetable-based first courses, white meat, fish and shellfish.
