
This is a sparkling wine produced in Abruzzo, in the province of Chieti, from Pecorino grapes. This grape variety is particularly suitable for frothing using the Italian method. The sparkling base wines are characterized by a deep pleasantness, freshness, floral, fruity and balsamic aromas with a good basic harmonicity.

Wine description
This sparkling wine has a light straw yellow color with bright green reflections. It has a fine and persistent perlage.
Colour
Floral hints of white flowers, fruity apple and citrus nuances. Slightly balsamic finish.
Bouquet
Fresh, harmonious, smooth, delicate.
Taste
Excellent aperitif; ideal with seafood, grilled fish and fried anchovies cartoccio. Highly appreciated with medium-aged soft cheeses.

Winemaker's notes
Made from 100% Pecorino grapes harvested in late August-early September and sourced from a “mosaic” of small vineyards located throughout the province of Chieti. After soft crushing and pressing of the grapes, the juice is placed at a thermodynamically controlled temperature (14-16°C). Initial fermentation takes place on selected yeasts. Subsequently, the wine undergoes a second fermentation in stainless steel tanks (autoclaves) with aging according to the Italian method (or Charmat method) at a controlled temperature. The entire period of frothing and aging lasts about 30-45 days.
