Pairings
Winemaker's notes
It is made from 100% indigenous organicred grapes harvested in the late August and the first decade of September, and sourced from a “mosaic” of small organic vineyards located throughout the province of Chieti. After a soft crushing and pressing of the grapes, the juice is placed at a thermodynamically controlled temperature (57-61°F). Initial fermentation takes place on selected lees. Next, the wine undergoes a second fermentation in stainless steel tanks (autoclaves) with an aging according to the Italian method (or Charmat method) at a controlled temperature.
