Description of the wine
This sparkling wine has a light straw yellow color tending to green. Fine and persistent perlage.
Sight
The nose carries hints of white peach, apricot and apple that blend with white flowers and hints of citrus; a very light note of cookie is perceived in the finish.
Smell
It has good structure and persistence with excellent harmonicity. The flavor is savory, fresh and smooth.
Taste
It is excellent as an aperitif; an all-day wine for fish dishes, vegetable stews and white meats.

Winemaker's Notes
It is made from 100% native white grapes, harvested between the end of August and the first decade of September, from a “mosaic” of small organic vineyards located throughout the province of Chieti. After soft crushing and pressing of the grapes, the juice is placed at a thermodynamically controlled temperature (14-16°C). Initial fermentation takes place on selected yeasts. Subsequently, the wine undergoes a second fermentation in stainless steel tanks (autoclaves) with aging according to the Italian method (or Charmat method) at a controlled temperature. The entire period of frothing and aging lasts 100 days.
