
Trabocco Pecorino is a sparkling wine produced in Abruzzo, in the province of Chieti, from Pecorino grapes. This is an indigenous grape variety linked to the tradition of Transhumance, during which shepherds brought sheep from the mountains to the sea, and along the way the sheep ate the bunches. This grape is very suitable for sparkling wine making with the Italian method. The base sparkling wines are characterized by a deep pleasantness, freshness, floral, fruity and balsamic aromas with a good basic harmonicity.

Description of the wine
This sparkling wine is light straw yellow in color with bright green highlights. It has a fine and persistent perlage.
Sight
The nose has floral hints of white flowers, fruity nuances of apple and citrus. Slightly balsamic finish.
Smell
The taste is fresh, harmonious, soft and delicate.
Taste
It is an excellent aperitif; ideal with seafood, grilled fish and fried anchovies’ foil. Highly appreciated with medium-aged soft cheeses.

Winemaker's Notes
Made from 100% Pecorino grapes harvested in late August-early September and sourced from a “mosaic” of small vineyards located throughout the province of Chieti. After soft crushing and pressing of the grapes, the juice is placed at a thermodynamically controlled temperature (14-16°C). Initial fermentation takes place on selected yeasts. Subsequently, the wine undergoes a second fermentation in stainless steel tanks (autoclaves) with aging according to the Italian method (or Charmat method) at a controlled temperature. The entire period of frothing and aging lasts about 30-45 days.
